CONTEMPORARY ADVANCEMENT IN PANEER PRODUCTION BY OPTIMIZING PANEER QUALITY USINGTAGUCHI ORTHOGONAL ARRAY

Abstract
Paneer is a non-fermentative, non-renetted and non-melting type of cheese, obtained by
acid and heat coagulation of milk. Numerousmanufacturing process parameters affect the of quality of
paneer such as the heating temperature of milk (A), coagulation temperature (B), the strength of coagulant (C),
immersion time in chilled water (D) etc.An appropriate amalgamation of these factors may produce best quality
paneer.For optimization L27 Taguchi Orthogonal array was designed with 4 factors and 03 levels for evaluating
the optimum fallout. A total of 81 experiments were conducted and for each trial, paneer quality score was
seasoned for its composite sensory grading. It was alleged that the best quality score was apprehended using the
combinationA3B3C3D3. The quality score in paneer, in this case, was maximum and logged as83%. For
authentication, a confirmation run was carried out with the projected combination of factors.It was clinched that
this amalgamation is virtuous enough to attain the highest quality score in paneer.
