OPTIMIZING THE FINGER MILLET DEVELOPMENT WITH FOX NUT POWDER USING RSM BASED EXTRUDED SNACK FOOD FORTIFIED

Abstract
In today’s world, people in their fast paced lives tend to consume hassle-free nutritious foods and they prefer to inculcate
these in their off-springs as well. Nutrition bars, also called as protein bars are highly popular amongst children. Hence, it is our duty
to create and provide food products which are laden with nutritive products naturally available in nature sans using any
preservatives. Hence, in our paper, we have introduced a method of producing a snack food based on the goodness of rice flour, corn
flour, cheese and fox nut. The paper has the information of their nutritive values, their various parameters and their results. A
detailed analysis of various parameters like Ratio of expansion, Density for bulk, Holding capacity in water, Index solubility and
absorption in water etc. has been derived with the MATLAB tool. Also, sensory analysis and scanning electron micrograph results
are obtained below.
