A ROLE OF PREBIOTICS IN FOOD AND HEALTH: A REVIEW

Abstract
Due to the global demand of food products which on consumption increase the individual health are the areas of growing demand by the consumers in recent years. So, various food industries are looking for a novel product with functional properties. Prebiotics are such functional ingredient that is utilized by the microorganisms present in the gastrointestinal tract of humans providing beneficial effect. Prebiotics also resist the digestion process by acids and gastric enzymes. Then it travels through the gastro intestinal tract and it is selectively fermented by the probiotic organisms giving rise to short chain fatty acids and give health promoting use to humans. This study mainly focuses on the impact of prebiotics in food and health. Most commercial prebiotics are carbohydrates which are either extracted from food items or it is incorporated in it providing useful health effects. The prebiotic also improves health by creating a balance between useful microorganisms in the gut and it also induces the glucose and cholesterol metabolism helping to resist diabetes and obesity. Some research has been carried out related to the anti-tumor effect of prebiotic with the help of probiotic. The future studies can mainly focus on the effect of various other prebiotics on good microorganism or probiotics.[1-11].
